Denmark - Copenhagen

Quiet the Mind and the Soul will Speak

No surprise this is one of the happiest places on earth - calm, easy, scenic and focused on food & water (the sea, not the tap). Despite the moody weather, every coffee shop and restaurant exudes a sense of warmth and cosiness that begs you to stay for hours and hours. A very quick weekend getaway - rent a bike and you can see the whole city in a matter of hours. One thing for next time: a visit to the beautiful Opera House!

Must Haves:
1) Organic Wines: Wine bars are everywhere, including Orange wines from Austria which are best if actually a 'cloudy white', otherwise too sweet for my liking. Manfred's wine bar the favourite in town, followed by the Roxie Bar at Hotel Herman - whimsical for an afternoon drink. For a country that doesn't really produce their own wine, they sure can curate a killer selection of the world's finest.

2) Hotel: 71 Nyhavn right along the canal edge, lovely rooms with exposed beams and true Nordic charm and warmth, including the cavernous restaurant below.

3) Restaurants: Most are organic and farm to table, not as a trend but as a true Danish lifestyle. Despite the Michelin stars all around town, most are very inviting and some actually affordable if you do some planning and research - Mes a cute spot with a living wall and Michelin star, very unassuming and friendly but delicious, would go back. And of course pizza and charcuterie at BÆST.

4) Coffee Shops: A dime a dozen here and easy to see why, so lovely to hang out in and chat - Cub Cave and Coffee Collective and Atelier September all top of the list.

Hygge at its finest

5) Random but Noted: the Reffen food market is worth a bike ride, as is MK Studio ceramics for beautiful locally sourced homewares. Beautiful place to just see and on the way to the Mermaid!
